A complete meal, plus lunch and snacks, without spending a dime

Yesterday, I came back from a weekend away and I was able to put together the following foods, without shopping at all:

  • Chicken soup. It was frozen and I defrosted it. Whenever we have a roast chicken, we always use the carcass to make soup and then freeze some of it.
  • Stir fry. I used some fresh vegetables (carrots, celery, onions), some frozen (peas, corn), a can of baby corn, and tofu. I also made some rice. For seasonings, I used this amazing soy sauce and salt from the Bluegrass Soy Sauce Company. (And now I think I’ll have to get some bottles of it for people as holiday gifts.)
  • White bean dip. I make this occasionally to take to work as a snack, with carrots and celery. I just boil a package of dry white beans (any kind will do), and add lemon juice, garlic, and salt. (I used the bourbon barrel sea salt from Bluegrass Soy Sauce Company, but obviously any kind will do.) 
  • Chili. I defrosted some of the chili I made last week, which I’ll take to lunch today.
